Magical Mint Kiss Cookies
1 c. butter or margarine softened
2/3 c. sugar
1 tsp. vanilla extract
2 c. all-purpose flour
1/4 c. Hershey's cocoa
About 48 Hershey's Chocolate Mint Kisses
Powered sugar
Heat oven to 350 degrees. Beat butter, sugar, and vanilla in a large bowl until creamy. Stir together flour and cocoa; gradually add to butter mixture, beating until blended. Mold scant tablespoon dough around each chocolate kiss, covering completely. Shape into balls. Place on ungreased cookie sheet.
Bake 8 to 10 minutes or until set. Cool about 1 minute; remove from cookie sheet to wire rack. Cool completely. Roll in powdered sugar. Roll in sugar again just before serving, if desired. Makes about 4 dozen cookies.
This recipe is a great one for the kids to help with. My girls unwrap all the candies while I prepare the dough. Then they mold the dough around the kisses. These are the cookies we are making for Santa this year! I think he'll LOVE them...
I'm just discovered The Night Before Christmas by Clement C. Moore BUT illustrated by JAN BRETT. This book is beautiful! Jan Brett is from our area and at least one of the pictures in the book is of a local landmark. Click on the link to Jan Brett and there's a whole little note from her about the story and the illustrations, very cool. Even if you aren't from here the book is so gorgeous. Ever since my brother and I were growing up, reading 'Twas the Night Before Christmas has been a Christmas Eve tradition, one I have carried into our family. Now that I have seen this Jan Brett edition, I MUST FIND IT! Barnes and Noble here in town claims they don't have it...I don't believe them!!! If there is time this weekend I'll go check it out for myself. Worst case scenario, I order it from Amazon and get it after Christmas. No big deal.
